nix shell: Handle output paths that are symlinks
This requires moving resolveSymlinks() into SourceAccessor. Also, it requires LocalStoreAccessor::maybeLstat() to work on parents of the store (to avoid an error like "/nix is not in the store"). Fixes #10375.
